Oh so good recipe!!!

I made this recipe this week and oh, this was so good! I found this recipe in Easy Summer Meals by Cooking Light. Enjoy!

Breaded Pork Cutlets (would taste good with chicken too, i think)
2 slices white bread (I used whole grain wheat)
3/4 teaspoons kosher salt
1/2 teaspoons freshly ground black pepper
1/2 teaspoons dried rubbed sage (I had fresh in my garden, so I used a little less)
1/2 teaspoons dried sage (I also had fresh in my garden, so I used a little less)
8 boneless pork chops (1/4 inch thick) (I just had 2 butterflied ones)
1/4 cup all purpose flour
3 large egg whites, lightly beaten
2 teaspoons canola oil (i used vegetable, but next time probably will use peanut)
Cooking spray (didn't use)
4 lemon wedges (didn't have and don't think you really need)

*place bread slices in food processor, pulse until coarse crumbs (at least one cup). Place bread crumbs in shallow dish. *combine kosher salt, pepper, sage and thyme, sprinkle over both sides of pork. Place flour in shallow dish, place egg whites in another shallow dish. Dredge pork in flour, dip in egg whites, and dredge in breadcrumbs. Heat oil in large nonstick skillet over medium high heat. Add pork to pan. Cook 2 1/2 minutes until lightly browned. Lightly coat surface of chops which cooking spray, turn chops over. Cook another 2 1/2 minutes until done. serve with lemon wedges - OMG, so good!!!!
